Kicked Up Chicken Fingers and Waffles

 

Ingredients
2 lbs chicken tenders
1 Tablespoon of Salt
1/2 Tabespoon of Black Pepper
1/2 Tablespoon Garlic Powder
2 cups buttermilk
3 cups all purpose flour
Peanut oil

Directions

Sprinkle chicken tenders with seasoning blend. Dredge chicken in flour, dip into buttermilk and back into flour.

Preheat oil to 350 degrees. Fry fingers in deep hot oil 5 to 7 minutes or until golden brown.



For Waffles:
Use  any  selection of Shortstacks Pancake and Waffle Mix.
2 Cups Buttermilk
2 Eggs
4 tbsp Butter
Directions:

1. Pre-heat gridde or waffe iron to medium-high heat or 350 & grease with butter or cooking spray.
2. Separate eggs.
3. Whisk together egg egg whites and milk. In another bowl, whisk together egg yolks and melted butter.
4. Combine both liquid mixtures & pour over dry mix.
5. Ladle mixture onto gridde or waffle iron and cook until edges are dry. Flip; cook until golden.

Vegan Directions:

1. Pre-heat griddle or waffle iron to medium-high heat or 350 & grease with butter or cooking spray.
2. Combine dry mix with soy milk and oil. Beat batter until smooth.
3. Ladle mixture onto griddle or waffle iron and cook until edges are dry. Flip; cook until golden.
